Here is an easy and delicious recipe using swiss chard. This one was sent by Gillie, who comes every Saturday usually with her husband and always with her terribly fun dog, Kaiya. Kaya has big bangs that hang over her eyes and she is friendly and energetic (so is Gillie!).
I promised you the recipe for tomato chard bake. It’s from the book “Ripe from around here” by Jae Steele.
2 medium onions
3-5 medium cloves garlic chopped
3 cups chopped fresh tomatoes
1 cup stock or water
2 tbs balsamic vinegar
6 packed cups Swiss chard
2 tbs olive oil
1/2 tsp sea salt
Freshly ground black pepper
Preheat oven to 375C.
Place onions, garlic, tomatoes, liquid and vinegar in a 9×13-inch glass baking pan. Bake for 30mins.
Fold in chard, oil, salt and pepper, making sure that the chard is under the liquid (helps to chop the veggies small).
Return to the oven and bake for about 30 mins more until the onions are soft.
