Kyla’s arugula, mint and watermelon salad

Subject: arugula, mint and watermelon salad

the lcbo hasn’t posted the recipes from its newest issue online, so here it is:
6 cups arugula
2 cups diced watermelon
1 cup crumbled feta
1 cup mint leaves

1 tbsp balsamic vinegar
1/4 cup olive oil
salt & pepper
1/2 cup slivered almonds, toasted

weird combo I know but it’s wicked good. and as i said you can also play around with it (lettuce for the arugula) and we skipped the almonds. and in this case I don’t buy local — i find greek feta really tastes the best


ps a summer staple around our house is simply feta, watermelon, black pepper & lemon juice — mmm!
