while having our usual morning tea break this past Monday, Nieves shared another one of her delicious, mostly raw, always nutritious, recipes. Kyla suggested it be added to our farm’s blog, so here it is (it is now the featured item on our Recipe page):
GARLIC SCAPE PESTO
- a bunch of garlic scapes
- 1/4 cup or to taste extra virgin olive oil
- 1 cup soaked almonds, at least or 2 hours, overnight OK too
- sea salt to taste
Run the garlic greens through the food processor, then add the rest of the ingredients and process again. Adjust the quantity of almonds, and oil to your liking. Experiment adding some fresh herbs, or some cheese (local parmesan would work great).

In the meantime, be inspired by Kyla and Rob’s spring summer dinner. “This picture is from last week: the fresh greens, pea shoots, bbq’d scapes, and a goat cheese dressing Rob made with some of that wild oregano thrown in. And, of course, wine!” – Kyla
