Nieves’ Garlic Scape Pesto


Nieves worked on the farm for part of the summer. One morning after the garlic scape harvest, while having our usual tea break, Nieves brought out one of her nutritious snacks: scape pesto. It is delicious

Scape Harvest

  • a bunch of garlic scapes
  • 1/4 cup or to taste extra virgin olive or local sunflower oil
  • 1 cup soaked almonds, at least 2 hours, overnight OK too
  • sea salt to taste

Run the garlic greens through the food processor, then add the rest of the ingredients and process again. Adjust the quantity of almonds, and oil to your liking. Experiment adding some fresh herbs, or some cheese (local parmesan would work great).

I have never used the cheese, it tastes delicious with just the nuts. Use it on sandwiches or as a dip.
